Objectives and competences

The aim of the course is for the student to gain knowledge about the basic physiological processes that take place in fruit during ripening, to gain knowledge about current methods of fruit processing with an emphasis on maximum preservation of nutritional value and achieving optimal sensory quality of the product. At the same time, the student will have to acquire knowledge regarding the adaptation of harvesting technologies (storage, processing) according to the changed conditions of cultivation (climate changes, drought, temperature and heat stress), according to the introduction of digitization procedures in harvesting technologies, and according to the demands of the market for sustainably grown and also processed fruit.

Content (Syllabus outline)

• chemical fruit structure in quality parameters, • physiological processes during fruit ripening and possibilities of their regulation • methods (destructive and non-destructive) of optimal harvest date prediction • methods of fruit processing (thermal processing, concentration, draying, liofilisation, freezing, radiation, disinfection, use of biofilms, …) • degradation processes in fruit in time of storage and processing, • technologies of fruit beverages • secundary products in fruit processing • needs for energy in fruit storing • the possibility of using secondary products of fruit processing • the issue of packaging for fruit products • digitization and creation of predictive models for quality development and forecasting of yield (fruit) safety risks • basic approaches to sensory evaluation of fruit and fruit products

Intended learning outcomes - knowledge and understanding

• Students will: • know and understand the physiological processes that take place in fruit during ripening, storage and processing • understand the concepts of microbial and physiological stability of the yield and product and the factors that affect them in postharvest • know and understand the parameters of fruit quality and maturity (specifically according to the production system), also as raw materials for use in post-harvest technologies, and know how to evaluate and analyze them independently • demonstrated the implementation of basic technological processes in fruit processing • interpreted the connection between pre- and post-harvest technologies in fruit growing related to the production system (conventional or sustainable forms) • be able to convey information and ideas to an interested audience • know how to evaluate fruit or fruit products sensoryally • developed skills necessary for continuing studies (approach to identifying, analyzing and solving current problems in the field of harvesting technologies)
