Content (Syllabus outline)
Probiotics, prebiotics, synbiotics, postbiotics, live therapeutic agents, biotherapeutics and other beneficial microorganisms in nutrition and their influence on the human microbiota.
Difference between probiotics and beneficial microbes in fermented foods. Mechanisms of action of probiotics: production of vitamins, bacteriocins, organic acids, short-chain fatty acids, exopolysaccharides, competitive exclusion of pathogens, direct in indirect metabolism regulation.
Antimicrobial efficiency of probiotics and other beneficial microbes in foods.
Intended learning outcomes - knowledge and understanding
Knowledge and Understanding:
The student will be able to:
- recognise the difference between probiotics, prebiotics, synbiotics, live therapeutic agents, postbiotics and other beneficial microbes,
- explain the importance of probiotics and other beneficial microbes in nutrition,
- define the role of beneficial microorganisms in food fermentation,
- define the role of probiotics and other beneficial microorganisms in vitamin production and production of other beneficial substances.
